Choco-Coconut ‘Bounty’ Oatmeal

For the second guest post, I have for you a beautiful porridge bowl by Monica Zolczer at Mindfully Moni. It may still be summer... but porridge is a year round favourite! Some great flavour combos, and not forgetting the cute banana cutouts. Monica used the Super Seedy Toppers but most of the flavours would make great Topping... how about Choc-Cocout for a double chocolate bowlful :-)

Recipe: Choco-Coconut ‘Bounty’ Oatmeal

Ingredients:

  • 40g rolled oats
  • 1 mashed banana
  • 2-3tbsp cacao powder
  • 1tbsp lucuma powder
  • 1tbsp date syrup
  • 1tbsp coconut shreds
  • 150ml coconut water

Toppings:

  • 1tbsp Super Seedy Toppers
  • 1tbsp coconut shreds
  • 1tbsp quinoa pops

Method:

  1. Combine all the ingredients for the choco-coconut oatmeal in a pan until the mixture is smooth and free of lumps.
  2. Cook the oatmeal on a medium-low heat until the milk no longer separates from the oats, when stirring with a wooden spoon, and the desired consistency is reached. (Note: Some people like to add in the mashed banana after cooking but I do this before cooking; it’s completely up to you!)
  3. Carefully remove the oats from the hob and allow to cool for a few minutes whilst you prepare the toppings/ wash the fruit.
  4. Pour the oatmeal into a breakfast bowl and smooth out the top, using the back of a spoon.
  5. Sprinkle with your desired toppings & ENJOY!

Chunky Chocolate & Coconut Flapjacks

But for now, feast your eyes on these beautiful flapjacks, thank you Meghan for a simple and delicious recipe using the Choc Coconut Toppers!  

Recipe: Chunky Chocolate & Coconut Flapjacks

(makes 12 flapjacks)

Ingredients:

  • 1/3 cup (70g) coconut oil
  • 1/3 cup (100g) date syrup
  • 1/3 cup (35g) cacao powder
  • 2 medium ripe banana
  • 3 cups (300g) oats
  • 1 cup (150g) Wholeplus Choc Coconut Topper

Method:

  1. Begin by preheating your oven to 180ºc, then line a square baking tin with greaseproof paper (I used a 21cm x 21cm tin).
  2. Add the coconut oil and date syrup to a large saucepan and gently stir them together over a low-medium temperature until the coconut oil has melted. Stir in the cacao powder.
  3. Mash the bananas thoroughly and place them in the saucepan. Mix well until everything is combined.
  4. Remove the pan from the heat then add the oats to the liquid gradually, stirring well. The flapjack mixture should be thick and sticky, with little to no liquid. Once you've used all the oats, stir in the Wholeplus topper. 
  5. Pour the flapjack mixture into the baking tin, smooth over the top then bake for 20 - 25 minutes in the centre of your oven, until golden brown and slightly crispy on top.
  6. Leave to cool for 10 minutes then remove the greaseproof paper from the tin and slice the flapjack into 12 pieces. Store in an airtight container in your fridge for up to a week.

For those of you who have been supporting Wholeplus since it's creation in 2013, you'll remember I originally sold 'Squares' which were the hugely popular tiny munchy cubes. Regrettably, I took them off my product line just over a year ago since they were too labour intensive and I was simply not able to upscale to meet demand. However it continued to play on my mind as I often get asked for 'squares' and 'bliss balls' and am constantly making them up for my self and as gifts... they often feature in the recipe blog over at Including Cake too.

So, it this in mind.... I have created a new bespoke ordering option... with a personalised twist!

I am offering balls, balls and squares as bespoke orders only so I can keep control of order numbers. These will be based on the Toppers base with 'mix-ins' to suit your preference that will bind the mixture into bars or balls for easy snacking.
