A great simple recipe for adding some Wholeplus goodies.
Quinoa cookies are a great gluten free, nutrient dense alternative to regular wheat based cookies. Using the Toppers (or Squares) here ensure they are sweet yet free from refined sugar and other nasties.. a super simple recipe to whip up in minutes.
These cookies freeze well too and you can also get more creative and throw in extra seeds or nuts if you wish. The flax and banana/avocado helps bind them but they will work if you omit either one (not nth!) but they will be a little more delicate to handle.
Recipe: Choc toppers quinoa cookies
Makes 12 cookies
- 1 cup cooked quinoa
- ¼ cup cocoa powder
- 3 tbs ground chia or flax
- 1 small banana mashed (or 1/2 an avocado)
- 2 tbs coconut oil (or other nut/seed oil)
- 1 cup (1 ½ packs) Wholeplus chocolate toppers or 2 packs squares (approx 160g total)
Mix the cocoa powder with the chia flax and cooked quinoa to coat. Stir through all remaining ingredients until sticky and well mixed through.
Scoop into fat cookie dollops and place on a lined baking sheet, press down with a fork. Bake at 180C for approx. 20 minutes until slightly golden. The cookies will be soft when they come out of the oven and will firm up to touch as they cool but remain soft in the centre.
