Chocolate berry parfait

I love recipes that can act as both breakfast and dessert... this is one of those!

Layer up Toppers with chia jam and non dairy coconut yoghurt in my case- but you could use any plain flavoured sugar free yoghurt. Play with the flavours... why not try Vanilla Spice or Cinnamon toppers with a banana layer!

Chia seeds are a powerhouse of nutrients and perfect for energy and endurance since they take in water, forming a gel like consistency, and keep the body hydrated for long periods of time. Endurance athletes love these little seeds!

Recipe: Chocolate berry parfait

Serves 1

Ingredients 

  • 1 carton coconut yoghurt (or 1/2 cup yoghurt of choice)
  • 1 tsp cocoa
  • 1 tsp agave or maple syrup
  • 1 cup raspberries (or strawberries)
  • 2 tb chia seeds
  • ΒΌ cup chocolate Wholeplus toppers

Method 

Mash the berries with the chia seeds and set aside to thicken for a few minutes.

Layer up the parfait in a drinking glass or small bowl. Serve immediately.
